Select the Lineups management options from the menu, and you will be presented with different lineup options and have to choose one. Then go to the Franchise section and scroll until you see a tab ...Once the servers go down, you will not be able to access it in-game anymore, even though you never uploaded it to the servers in the first place. It'd be like if you made some levels on Mario Maker and saved them locally to your Switch (ie, not uploading them) then after 2 years it's impossible to play them anymore.
